I made the biscuits using the coconut flour and crisco butter flavored shortening. They were amazing! This was my first attempt at a gluten free recipe and I was so pleased it was a success! Gluten free mama's recipe has lessened my fears of gluten free baking! I even cut the recipe in half so I had to use 1/2 an egg and the biscuits were still ummy! This makes me believe the recipes in this book will yield some tasty food!Lane

I have tried my hand at baking many times since I was diagnosed with Celiac Disease and was forced to go gluten free. I baked quick breads, cakes, cobblers and cookies with little success. Last summer I attempted to make a lemon poppy breakfast bread that sounded so good using coconut flour. I spent over $20 collecting all of the ingredients and it took me at least an hour to put it all together. When I brought it out of the oven I could tell right away something was wrong. It did not rise at all and when I cut into it, it was so dense and had such a strong coconut flavor that I knew it wouldn't taste good. My husband and I made numerous attempts to nibble on it and we tried hard to like it but eventually we gave up and it went in the trash. My next try was a peach cake that completely fell apart into crumbs when I cut into it. It's been discouraging for me because I enjoy baking and I miss not being able to eat fresh baked goods.
I just received a few days my starter kit from Gluten Free Mama. I made the Banana Blueberry bread yesterday and it turned out great!! Yay!! My husband and I were both thrilled as he has missed the fresh baked goods too!!
Thank you Gluten Free Mama! I look forward to trying many of your delicious recipes using your homemade flour blends!! I had no idea using just one flour would cause the recipe to flop!

Love this recipe book! So many great recipes. The oatmeal chocolate chip cookies are wonderful. Would never know they are dairy, egg and gluten free! I chose the almond blend flour to come with the kit. It worked perfectly in the cookie recipe.
