For the last 17 years, our household has been mostly gluten-free and everything we bake is gluten-free including the snacks and treats the kids take to school for class parties and the items I bake for teacher appreciation lunches and that sort of thing.
This is the best flour option there is. No exceptions.
I've used, I think, every prepackaged GF flour and flour mixture on the market. I've made dozens of my own mixes from various blogs (Gluten Free Girl, Gluten Free on a Shoestring and MANY MANY MORE)
While I typically don't like mixtures which include coconut flour, I absolutely adore this. HANDS DOWN it's the BEST GLUTEN FREE FLOUR AND FLOUR MIX I've used in 15 years - - and that includes the prepackaged mixes and the mixes I've made from every blog recipe.
I am very fond of *some* of the Gluten Free on a Shoestring mixes and recipes.
I also really love the XO Baking Co Mixes. The flour blend, though wonderful, doesn't sub 1:1 as it claims. So I would call it a solid second to GF Mama. Also, it is more expensive.
It's common to have trouble with texture and results when subbing 1:1. But GF Mama Coconut blend really DOES sub 1:1 in everything I've made which includes
• Cook's Illustrated Perfect Chocolate Chip Cookie Recipe (the best chocolate chip cookies in the world as far as I'm concerned)
• quick breads like zucchini bread and banana bread
• cakes, cupcakes and other cookies
I use their scone mix for scones but will try the Coconut Blend sometime to see how it turns out.
For bread, we just buy the Udi's Gluten Free bread at Costco so I can't speak to results in baking gluten free yeast breads.
NOTE: there is _no_ coconut flavor in any of the final products. We have a couple of family members who abhor coconut and can taste it in any quantity. They love the baked goods I've made and without exception.
